Country Harvested Pumpkin Muffins

Country Harvest Pumpkin Muffins
By the Twin Sisters Cookbook 


 ½ cup of raisins
½ cup of chopped dates
2 ½ tsp baking soda
¾ cup of boiling water
½ cup of butter (melted)
¼ cup of olive oil
1 cup of milk
2 eggs
¾ cup of honey
½ can of pumpkin
1 ½ cups oats
2 1/2 cup of whole wheat pastry flour
½ tbsp cinnamon
1 tsp salt
 
Preparation time: 25 minutes
Cooking time : 20 - 25 minutes

1. Place raisins, dates, and soda in a large bowl; add the boiling water; cool slightly
2. Add the remaining ingredients; stir well
3. Pour the batter into greased muffin pans
4. Bake at 375 degrees for 20 - 25 minutes

Chocolate Chip Banana Muffins
Really easy to make and very tasty. Everyone loves them. A friend gave us this recipe.
 
What you need:
3 black bananas
1 egg
½ cup of sugar
Vanilla
1/3 cup of vegetable oil
1 ½ cups of flour
1 teaspoon of baking powder(non-aluminum)
½ teaspoon of baking soda
Chocolate chips ( I have tried frozen blueberries instead of Chocolate chips. Really good also)
Preheat the oven to 350.
Pour the batter in muffin tins and cook for aprox. 20 mins.
Let the slightly cool off. Then enjoy!
